Chocolate Berry Cookies.
These are based upon a recipe from Project Vegan Baking. We really enjoy the pairing of the dark chocolate with the fruit. Other types of chocolate and fruit will work, experiment and let us know what great combinations you discover.
Ingredients
- 130 grams vegan butter.
- 120 grams caster sugar.
- 50 grams brown sugar1.
- 60 millilitres non-dairy milk.
- 1 teaspoon vanilla extract.
- 1/2 teaspoon baking soda.
- Pinch salt.
- 280 grams plain flour.
- 100 grams frozen berries2.
- 100 grams dark chocolate3 (chips or chopped).
Equipment
- Large mixing bowl.
- Wooden spoon.
- Kitchen scales.
- Baking tray.
- Reusable baking sheet.
- Measuring spoons.
- Measuring jug.
Method
- Pre-heat oven to 180°C.
- Cream the butter and sugar in the mixing bowl.
- Add the vanilla extract and milk and mix well.
- Sift in the flour, baking powder, and salt. Stir until fully incorporated4.
- Fold in two thirds of the chocolate chunks, and two thirds of the chopped frozen fruit.
- Form into balls and place onto the baking sheet.
- Top with the remaining chocolate and fruit.
- Bake for 10 to 15 minutes.
- Remove from the oven and set aside to cool for 10 minutes.
Notes
- This can be substituted for more caster sugar.
- We typically use frozen strawberries and raspberries.
- The more the merrier... within reason.
- The linked recipe says careful not to overmix, though we don't really know what this means.
